Fluffy Parmesan & Herb Cloud Eggs

 

Egg whites shine in this airy and savory dish that’s perfect for breakfast or brunch. Light, puffy, and packed with flavor, these cloud eggs are a fun twist on traditional baked eggs.

Ingredients:

  • 4 large egg whites

  • 1/4 cup grated Parmesan cheese

  • 1 tbsp chopped chives

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 4 large egg yolks

Instructions:

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.

  2. In a clean mixing bowl, whisk egg whites with salt and pepper until stiff peaks form.

  3. Gently fold in Parmesan and chives.

  4. Spoon the mixture onto the baking sheet in four mounds, creating a small well in the center of each.

  5. Bake for 3 minutes, then carefully place a reserved egg yolk into each well.

  6. Bake for another 3-4 minutes, until the whites are golden and the yolks are slightly runny.

  7. Serve immediately with toast or a side salad.

Chef’s Tip:
