Honey Lime Dressing

Ingredients

  • 1/4 cup lime juice, freshly squeezed

  • 1/4 cup honey

  • 1/2 cup olive oil

  • 1 tablespoon Dijon mustard

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/2 teaspoon lime zest 

Instructions

  1. Combine the lime juice, honey, Dijon mustard, salt, and pepper in a bowl.

  2. Whisk the ingredients together until they are well combined.

  3. Slowly drizzle in the olive oil while continuing to whisk. This will help emulsify the dressing, creating a smooth and creamy texture.

  4. Continue whisking until the dressing is fully emulsified and slightly thickened.

  5. Taste and adjust seasonings as needed. You may want to add more honey for sweetness, lime juice for tartness, or salt and pepper to taste.

  • Make it Creamier: For a creamier dressing, you can add 1-2 tablespoons of plain yogurt or mayonnaise.
