Kale & Red Onion Frittata

 

Ingredients:

  • 8 large eggs

  • 1/4 cup Half & Half or milk

  • 1/2 red onion, sliced

  • 1 1/2 cups kale, chopped

  • 1/4 cup mozzarella cheese, shredded

  • 1/4 cup Parmesan cheese, grated

  • 1/2 cup sharp cheddar cheese, shredded

  • 1/4 tsp garlic powder

  • 1/4 tsp onion powder

  • Salt & pepper to taste

  • 1 tbsp olive oil or butter

Instructions:

  1. Preheat & Prep:
    Preheat your oven to 375°F (190°C). In a mixing bowl, whisk together the eggs, half & half, garlic powder, onion powder, salt, and pepper. Set aside.

  2. Sauté the Vegetables:
    Heat olive oil or butter in an oven-safe skillet over medium heat. Add diced red onion and sauté for 2–3 minutes until softened. Stir in the chopped kale and cook for another 2 minutes until wilted.

  3. Assemble the Frittata:
    Spread the veggies evenly in the skillet, then pour the egg mixture over them. Sprinkle mozzarella, Parmesan, and sharp cheddar cheese evenly on top.

  4. Cook & Bake:
    Cook on the stovetop for 2–3 minutes until the edges start to set. Transfer the skillet to the oven and bake for 12–15 minutes, or until the eggs are set in the center.

  5. Finish & Serve:
    Remove from the oven and let it cool slightly before slicing. Serve warm and enjoy!

Chef’s Tip:

For an extra crispy top, broil the frittata for the last 1–2 minutes until the cheese is golden brown. Pair with a side of mixed greens or toast for a complete meal.
