Turmeric Ginger Chicken Soup

This hearty, immune-boosting soup combines the anti-inflammatory powers of turmeric and ginger with tender chicken and fresh vegetables. It’s perfect for chilly days or when you need a comforting, nutritious meal.

For the Soup Base:

  • 2 tablespoons olive oil

  • 1 medium onion, finely chopped

  • 4 garlic cloves, minced

  • 1 tablespoon fresh ginger, grated

  • 1 teaspoon ground turmeric (or 1 tablespoon fresh turmeric, grated)

  • 1 teaspoon ground cumin

  • 1 teaspoon smoked paprika

  • 1 large carrot, peeled and diced

  • 1 celery stalk, diced

  • 6 cups chicken broth

  • 1 cup coconut milk

For the Chicken & Additions:

  • 2 boneless, skinless chicken breasts or thighs

  • 1 cup baby spinach or kale, chopped

  • 1/2 cup cooked quinoa or rice (optional)

  • Juice of 1 lemon

  • Salt and pepper, to taste

For Garnish:

  • Fresh cilantro or parsley, chopped

  • Lemon wedges

  • Red chili flakes (optional, for heat)

Instructions

  1. Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add the onion and sauté until translucent, about 3-4 minutes. Stir in the garlic, ginger, turmeric, cumin, and paprika. Cook for 1-2 minutes until fragrant.

  2. Build the Base: Add the carrot and celery to the pot, stirring to coat with the spices. Pour in the chicken broth and bring to a gentle boil.

  3. Cook the Chicken: Add the chicken breasts to the pot. Reduce heat to low, cover, and simmer for 20-25 minutes, or until the chicken is fully cooked and tender.

  4. Shred the Chicken: Remove the chicken from the pot and shred it with two forks. Return the shredded chicken to the pot.

  5. Finish with Greens: Stir in the spinach (or kale) and allow it to wilt. If using quinoa or rice, add it at this stage. Stir in the coconut milk for creaminess, if desired.

  6. Season & Brighten: Add lemon juice and season the soup with salt and pepper to taste. Adjust the seasoning as needed.

  7. Serve & Garnish: Ladle the soup into bowls. Garnish with fresh cilantro, a squeeze of lemon, and red chili flakes for extra heat.
